Abstract

The utility model relates to the food industry, in particular to technologies for processing plant-based raw materials, and is intended for the production of protein-vitaminized concentrates based on plant-based raw materials for sports nutrition.The method for obtaining protein-vitaminized concentrates based on plant raw materials includes the preparation of plant raw materials, their washing, drying and grinding, aqueous extraction of protein substances from peas in combination with soy or oats, enzymatic hydrolysis of plant proteins with pancreatin with an activity of at least 75 U / mg at a temperature of +43…45 °C and pH 8.0-8.2 for 30-48 hours, followed by the addition of apple pectin as a stabilizer to improve the taste, homogenization, inactivation of the pancreatin enzyme and pasteurization of the hydrolyzate at a temperature of 85±2 °C for 30 minutes, cooling to 35±2 °C, with the addition of a vitamin composition, due to the introduction of aqueous extracts of plant vitamin-containing components obtained from lemon and rose hips, followed by drying by convective or lyophilic method at a temperature of 50±2 °C for 18-20 hours, to a moisture content of no more than 10±2%, with grinding, packaging, labeling and storage at 10 ± 2°C, until use.The technical result of the claimed method is an increased degree of hydrolysis of plant proteins, an increased content of free amino acids and bioactive peptides, improved protein digestibility, an expanded vitamin profile, reduced allergenicity, and improved organoleptic and functional properties of the product. The use of exclusively plant-based raw materials and food enzyme preparations without the use of chemical reagents ensures the technology is environmentally friendly, reduces costs, and is suitable for industrial implementation. The proposed method enables the production of stable and safe protein-vitamin concentrates of plant origin, suitable for use in specialized sports and functional nutrition products and meeting the "industrial applicability" criterion.
