Abstract

A tea hot pot base material and its preparation and use method, belonging to the technical field of food processing. The hot pot base material comprises tea material and seasoning powder; the tea material uses one bud with two or three fresh tea leaves from late spring or early summer as raw material, and is prepared through a special process comprising gradient temperature increase for fixation, gradient pressure application for rolling, and segmented drying; the seasoning powder is made from beef bone extract, over ten specific spices in a defined ratio, chicken essence, and monosodium glutamate through a maillard reaction. During use, the tea material and seasoning powder are taken in proportion and mixed with boiling water, followed by base material blending, seasoning and flavor enhancement, supplementary aroma and shaping, and then boiling to obtain a tea soup for drinking or for blanching and cooking ingredients. The invention uses tea to construct the flavor system of the hot pot base material, achieving an organic integration of the refreshing aroma of tea and the umami of ingredients, with unique flavor, rich layers, and prominent healthy attributes.
