Abstract

The invention relates to the wine industry, namely to a process for producing wine stock.The process, according to the invention, includes processing of grapes to obtain fresh squash, its periodic maceration-fermentation with a floating cap, draining the must, pressing the pomace, after which the fermented must obtained is fermented in a pulsating flow, subsequently, the young wine obtained is homogenized with fresh must obtained from a batch of fresh squash and directed to the final periodic fermentation in unitary tanks, after which the wine is drawn off the yeast and directed to storage.
