Abstract

The invention relates to a comprehensive composition with a triple barrier of antioxidants, anti-enzymes, and antibacterials, based on organic products of natural origin. It is characterized by a spray-form product containing a mixture of sodium alginate, chitosan of plant origin, pectin, and other microdosed components or solutes of plant origin, as well as plant lysozyme. The composition of the invention is formulated with key components such as ascorbic acid (vitamin C), citric acid, and heat treatments. The product aims to effectively control the activity of the enzyme polyphenol oxidase (PPO), also known as monophenol monooxygenase, which is involved in the oxidation of phenolic compounds. Furthermore, additional phenolic compounds, such as catechins, have been incorporated to compete with the natural substrates of PPO.
