Abstract
The present invention relates to methods for extracting collagen from various sources, including waste from the fishing industry, wherein the method comprises the steps of: a) providing a source of collagen; b) performing a first extraction with a strong base solution and ultrasound; and c) performing a second extraction with a D-(+)-gluconic acid delta-lactone (GLD) solution and ultrasound. The method allows for the preservation of the native structure of the collagen and the achievement of high yields. The invention also provides collagen obtained by the method of the invention, which retains the triple helix structure of type I collagen.
