Abstract

The present invention relates to a protease obtained from the fruit of Jarila caudata, a herbaceous plant resistant to water stress and high temperatures, with characteristics that facilitate its cultivation. The protease exhibits proteolytic properties superior to papain, including greater catalytic activity under various pH and temperature conditions, thus expanding its usefulness in industrial, agricultural, and medical applications. Furthermore, an efficient method for its production is described, based on the collection of latex from the fruit and its purification using two-phase aqueous systems, resulting in a high-purity, high-yield enzyme.
