Abstract
The present invention discloses a method for extracting Shanren Red natural edible pigment from Rhodomyrtus tomentosa and its application. The method includes the steps of raw material pretreatment, complex enzymatic hydrolysis, ultrasonic-assisted extraction, solid-liquid separation and concentration, optional macroporous resin purification, and drying. The present invention adopts complex enzymes (pectinase and cellulase) combined with ultrasonic-assisted extraction technology, and uses acidic ethanol as a solvent to efficiently extract anthocyanin pigments from Rhodomyrtus tomentosa fruits. The method features mild process, high extraction efficiency, high product purity and colour value, as well as safety and environmental protection. The prepared Shanren Red pigment powder has good stability and may be used in various fields such as food, beverages, and health products as a natural alternative to synthetic red pigments.
