Abstract
The present invention relates to oleogel compositions and dairy food products and dairy analogues comprising such oleogel compositions. In particular, the invention relates to the use of oleogel compositions to reduce the saturated fat content of dairy products and dairy analogues, while simultaneously providing desirable organoleptic properties for such food products.
