Procedure for production of pre-cooked block rice and pre-cooked rice en bloc

Abstract

The present invention describes a process for producing a food product, more specifically a ready-to-use cooking rice, an instant block-shaped rice that can be reconstituted with a unique and sensorially appealing crispy texture, in a reduced preparation time, either by cooking in a conventional pot or by heating in a microwave. The present process encompasses the stages of dosing the rice grains into individual portions; continuous cooking in a two-compartment tunnel with constant water change; molding and block compaction; dehydration by frying; and cooling and packaging.
