CO-PARTICULATED MILK PROTEINS AND METHODS FOR PREPARING THEM

Abstract

The present invention relates to a co-particulated milk protein composition comprising at least 60% by weight of total protein on a dry weight basis, based on the weight of the co-particulated milk protein composition; more than approximately 60% by weight of whey protein based on a total true protein weight; from approximately 5% to approximately 40% by weight of casein protein based on a total true protein weight; and wherein at least a portion of the total protein comprises casein-whey protein complexes, and wherein the co-particulated milk protein composition exhibits a co-particulation index of more than zero to less than or approximately 0.5%. The invention further encompasses a fortified food and / or beverage product comprising more than or approximately 4% by weight of protein, based on a weight of the food and / or beverage product. and incorporates said composition of co-particulated milk proteins.The invention also relates to a method for preparing the composition of co-particulated milk proteins.
