Abstract

This report describes a cryogenic jet injection system for food freezing, equipped with a flow decelerator using a vortex effect. The system comprises an atomization and control unit with jet atomizers positioned periodically and directed perpendicularly toward the cylindrical chamber with a converging cross-section. The atomized jets collide with each other sequentially, significantly reducing the injected flow velocity. These collisions generate a rotating nebula throughout the chamber. The fluid used in this application can range from chilled water to cryogenic fluids such as liquid nitrogen, depending on the desired degree of cooling or freezing.The innovative aspect of this invention is the rotational freezing method, which allows for the uniform freezing of edible products without requiring the cryogenic fluid to come into direct contact with the food surfaces. Furthermore, in the event of a malfunction, the device facilitates immediate maintenance or repair, as it features removable components that can be easily replaced (for example, the atomizers). Additionally, the "beta" angle can be varied, allowing for adjustment of the mist intensity inside the decelerating cylinder. Finally, this invention includes a control system responsible for driving the DC motor that powers the conveyor belt, ensuring that the food enters at a constant speed, thus improving freezing efficiency.The control system will also be responsible for opening the cryogenic solenoid valve that will allow the passage of the cryogenic fluid to the jet-type atomizers, depending on the temperature range of the flow that is inside the deceleration chamber.
