METHOD FOR OBTAINING A RAPIDLY ABSORBED IRON-INFECTED ANTI-ANEMIC COMPOTE

Abstract

A process for producing a functional, easily absorbed iron-rich anti-anemic compote comprising the following steps: a. Physical conditioning of raw materials and their respective treatments: black mashua (refined), bovine blood (heat-treated and refined), and mango (refined). b. Mixing (addition of orange juice) and standardization of parameters to a pH value in the range of 3.0 to 3.5 and a °Brix value in the range of 25 to 30. c. Filling (packaging) 100 g of compote mixture into a flexible, airtight, aluminum-colored bag made of high-density polyethylene with an aluminum layer. d. The packaged, airtight flexible bag is subjected to heat treatment in an autoclave at 90°C for 40 minutes at a pressure of 2000 hPa. to then perform a pre-cooling stage at 60°C and subject it to a thermal shock with cold running water 10°C; thus guaranteeing the safety of the product.
