Abstract
The present utility model relates to a seedless new cocoyam (Xanthosoma sagittifolium) - tamarind candy composition comprising of 20.18% by weight boiled and grated new cocoyam, 20.18% by weight shelled and ripe tamarind, 20.18% by weight hot water, 30.27% by weight brown sugar, 2.83% by weight all-purpose flour, 1.01% by weight margarine, 5.05% by weight white sugar and .30% by weight salt. This utility model aims to provide a technique for producing a seedless, chewy, and flavor-balanced new cocoyam-tamarind candy. The resulting product is highly acceptable while promoting the health benefits of new cocoyam and tamarind to consumers, thereby maximizing the utilization of these underutilized crops.
