A novel apparatus for rapid and easy evaluation of baking powders

Abstract

A novel apparatus to evaluate the gas producing ability of baking powders / leavening acids is disclosed. The apparatus described is inexpensive and easy to construct; and thereby provides an easy and rapid method that can be used to classify baking powders into fast acting and slow acting based on the volumetric flow rates of liberated carbon dioxide.
