A process for the preparation of garlic extract in powder form

Abstract

A process for the production of Garlic Extract based on alcholic and water extract has been developed. In this process extraction of chopped garlic cloves was carried out with ethyl alcohol (95.5%) and distilled water. Both extracts were concentrated in thin film flush evaporator and dried in a forcely hot air circulation cabinet dryer. The solid dried mass was grinded and mixed with lactose.
