Abstract
A process for the preparation of dehydrated, fried, value added potato chips has been developed. In this process, potato chips were infused in sugar solution of a predetermined brix. The process of osmosis continues till the brix of sugar solution is down upto a certain level. The infused potato chips were dehydrated and fried to prepare crispy value-added potatoe chips with a sweet taste.
