Abstract
The method for obtaining lactoferrin powder stabilized with iron(III) is characterized in that a lactoferrin solution with a concentration of 2.5 - 100 mg / mL in an aqueous solution containing iron(III) in the form of iron(III) citrate at pH 6.5 - 8.5 and a lactoferrin:Fe(III) molar ratio of 1:1 to 1:12 is mixed in an atmosphere of air or an inert gas, preferably nitrogen or argon, most preferably for 10 to 120 min at a temperature of 20°C to 30°C, and then the obtained solution is dried by spraying in a spray dryer equipped with a double-stream atomizer or a rotating spray disk at a concentrate flow of 0.5 l / g to 10 l / g, at an inlet temperature of 160°C to 220°C and an outlet temperature of 70°C to 30°C. 100°C, drying air flow in the range of 20 — 300 m3 / h and the residence time of the particle in the drying chamber no longer than 15 seconds.
