Claims

A method for detecting the pathogenic bacterium Escherichia coli, which includes taking a sample from the food being studied, adding to it a functional component that affects the change in the EPR characteristics of the sample, measuring the EPR spectrum and determining the presence of the pathogenic bacterium in the sample, characterized in that the nucleic acid sequence UCAAUGAGCAAAGGU with the spin label TEMPO is used as the functional component, and to determine the presence of Escherichia coli in the sample, the following changes in magnetic resonance parameters are detected using the EPR spectra: change in rotational correlation (τ с ) TEMPO radical with (3.8±0.38)⋅10 -11 up to (1.8±0.18)⋅10 -10 ; changes in the components of the rotational diffusion coefficient of the TEMPO radical, with -1 :D x with (1.2±0.12)⋅10 10 up to (1.9±0.19)⋅10 9 ; D y and D z with (6.6±0.66)⋅10 8 up to (4.4±0.44)⋅10 8 .
