Abstract

[0001] BEVERAGE COMPOSITION

[0002] Technical Field of the Invention

[0003] The present invention relates to a solid composition for forming a beverage. More specifically, the present invention relates to a solid composition for forming a beverage which does not comprise dairy protein.

[0004] Background to the Invention

[0005] It is known to provide products comprising instant coffee and creamer or coffee, creamer and sugar which produce coffee beverages upon dilution with water.

[0006] Traditionally, these products are manufactured by dry-blending coffee and creamer or coffee, creamer and sugar.

[0007] Typically, the products contain dairy protein to stabilise the fats in the composition, in particular the fats in the creamer portion.

[0008] However, dairy protein is sensitive to high temperatures, low pH and hard water which can result in in-cup instability. Moreover, a dairy free option is desirable to many consumers.

[0009] Additionally, drying coffee and dairy-stabilised creamer together can be problematic as the low pH of the coffee creates an unfavourable environment for the dairy protein which is the main stabiliser of the product.

[0010] This means that, generally, the pH of the composition needs to be increased before the coffee is added.

[0015] Summary of the Invention

[0016] According to a first aspect of the present invention there is provided a solid composition for forming a beverage, the solid composition comprising at least one soluble dietary fibre, at least one sugar, at least one vegetable fat, and at least one thickening agent, wherein the composition does not comprise dairy protein.

[0017] Surprisingly, the inventors found that the combination of at least one soluble dietary fibre, at least one sugar, at least one vegetable fat, and at least one thickening agent was able to provide improved composition stability and in-cup stability without the need of a dairy protein. Moreover, the inventors found that use of the solid composition does not result in the formation of oil droplets on the surface of the resulting beverage and, due to the absence of dairy protein, no flocculation is evident in the presence of hard water. By the term “dairy protein” it is meant herein a protein derived from a dairy product, such as milk. Dairy proteins include, for example, casein and whey.

[0018] By the term “composition for forming a beverage” it is meant a composition which can be used to form a beverage on dissolution or dispersion in an aqueous liquid, such as water or a milk.

[0019] By “soluble dietary fibre” it is meant a plant-based or plant-derived fibre, animal-based or animal derived fibre that is not digested in the small intestine and is soluble in water. Soluble dietary fibres are differentiated from insoluble dietary fibres which are not soluble in water.

1. A solid composition for producing a beverage, containing at least one type of soluble dietary fiber, at least one sugar, at least one vegetable fat and at least one thickener, wherein the composition does not contain milk protein.

2. The composition of claim 1, comprising a coffee material, wherein the coffee material is preferably selected from the group consisting of coffee extract, instant coffee, finely ground roasted coffee, and combinations thereof.

The composition according to any one of the preceding claims, wherein the soluble dietary fiber is selected from the group consisting of inulin, fructooligosaccharide (FOS), gum arabic, levan, polydextrose, kestose, nystose, raffinose, galactooligosaccharides, galactotriose, mannooligosaccharides, mannotriose, mannotetraose, soybean oligosaccharides, arabinogalactans, xylooligosaccharides, xylotriose, xylotetraose, arabinoxylan-oligosaccharides, arabinotriose, arabinotetraose, milk oligosaccharides, 2'-fucosyllactose, lacto-N-neotetraose, glucan (i.e., glucose-containing) oligosaccharides, cellooligosaccharides (or cellodextrins), resistant dextrins (e.g., soluble corn fiber, corn fiber syrup, soluble wheat fiber, soluble tapioca fiber, soluble pea fiber), nigerooligosaccharides, nigerotriose, nigerotetraose, kojitriose, kojitetraose, dextrans, beta-glucans, lichenan, isolichenan, and combinations thereof.

4. A composition according to any one of the preceding claims, wherein the soluble dietary fibre is present in an amount of at least 1% by weight of the filler, preferably in an amount of 1-40% by weight of the composition, most preferably in an amount of 3-30% by weight of the composition.

5. A composition according to any one of the preceding claims, wherein the sugar is selected from the group consisting of glucose, glucose syrup, sucrose, fructose, galactose, maltose, isomaltose, sugar hydrates (such as, for example, dextrose monohydrate) and combinations thereof.

6. A composition according to any of the preceding claims, containing from 25-60% by weight of sugars by weight of the composition.

7. A composition according to any one of the preceding claims, wherein the thickening agent is selected from the group consisting of starch, modified starch, carboxyethyl cellulose, xanthan, galactomannan, an ingredient containing at least one arabinogalactan protein, and combinations thereof.

8. The composition of claim 7, wherein the thickening agent is an ingredient comprising at least one arabinogalactan protein.

9. The composition of claim 8, wherein the ingredient containing at least one arabinogalactan protein is gum arabic.

10. The composition of claim 7, wherein the modified starch is nOSA-modified (n-octenylsuccinic anhydride-modified) starch.

11. The composition according to any one of claims 7 to 10, wherein the thickener comprises at least one ingredient containing at least one arabinogalactan protein and at least one modified starch, wherein preferably the at least one thickener comprises gum arabic and nosa-modified starch.

12. A composition according to any one of the preceding claims, which does not contain a milk protein selected from the group consisting of casein and whey.

13. A composition according to any of the preceding claims, wherein the vegetable fat is present in an amount of no more than 40% by weight of fat by weight of the composition.

A composition according to any one of the preceding claims, wherein the vegetable fat is obtained from an ingredient selected from the group consisting of coconut, cocoa beans, palm fruit, sunflower seeds, soybeans, palm kernels, cottonseeds, canola seeds, olives, safflower seeds, and any combination thereof.

15. The composition according to claim 14, wherein the vegetable fat is obtained from coconut and / or sunflower seeds.

16. A composition according to any of the preceding claims, which does not contain milk fat.

17. The composition according to any one of the preceding claims, further comprising an additional ingredient selected from the group consisting of a flavoring additive, a sweetener, organic acids, a nutraceutical, a coloring agent, and a combination thereof.

18. A composition according to any of the preceding claims, presented in the form of a powder or granules.

A method for producing a solid composition for preparing a beverage according to any one of paragraphs 1-18, comprising the steps of: a) adding at least one type of soluble dietary fiber, at least one sugar, at least one vegetable fat and at least one thickener to form a mixture; b) homogenization of the mixture; and c) spray drying of the mixture.

20. A method for producing a beverage, comprising the following stages: a) obtaining a composition according to any one of paragraphs 1-18; and b) adding an aqueous liquid to the composition.

21. The method of claim 20, wherein the aqueous liquid is water.

22. A container containing a composition according to any one of claims 1-18.

23. A method for producing a container according to paragraph 22, comprising the steps of: a) obtaining a composition according to any one of paragraphs 1-18; and b) adding the composition to the container according to paragraph 22.
