Abstract

A device and method for preparing pre-cooked whole or sliced ​​potatoes and / or vegetables – semi-finished products intended for use in gastronomy and salad production are described. The container (3) of the device allows for gentle mixing of the product by rotating around a hollow shaft (14), where nozzles (15) are located for supplying steam for heating and cooking through the inlet (8), for supplying cleaning and sanitizing solutions through the inlet (10) and inert gas through the inlet (19). After loading the cleaned whole or sliced ​​potatoes and / or vegetables, air is sucked out of the device and the contents are subsequently heated to the desired temperature with water vapor. After cooking is complete, the contents are cooled by evaporation of condensed water under the action of vacuum. The withdrawn steam is compressed and repeatedly used to heat the subsequent batch or a parallel operating device.
