Abstract

In superheated steam cooking systems, a heater in a water tank heats the water, turning it into steam. Steam pressure is applied, and when the steam is burned a second time in the boiler, superheated steam is obtained and released according to the function. Cooking methods such as frying, boiling, and steaming require different temperatures and humidity levels for the steam depending on the type and characteristics of the food. Claims

OCR09WP07 / 07 / 25691.The superheated steam cooking furnace is a rectangular cabinet containing the main components: a boiler (1) with a boiler heater (3) for producing steam; a separate steam boiler (2) with a steam heater (14) for heating the steam to superheated steam; and a piping and valve system for distributing the superheated steam from the steam boiler (2) to the cooking section. It is characterized by a two-stage heating process in separate tanks to produce superheated steam, with a thermocouple (8) in the boiler (1) measuring and controlling the temperature inside the boiler (1). Together with a thermocouple (5), heating is provided by a water heater (3) between the water tank (1) and the steam tank (2). A check valve (12) is used to transfer steam to the steam tank (2) which has a steam heater (14) to boil the steam into superheated steam. In the steam tank (2) there is a thermocouple (15) used in conjunction with a thermocouple (5) as well. This superheated steam is then sent to the outer jacket wall (19), the outer boiling jacket wall (22), and the steamer (27) which are the parts that store the superheated steam used for steaming food. The superheated steam is the same heat source that is distributed to cook multiple dishes.
