OCR06WT1. The process of producing superoxide dismutase enzyme from yeast consists of: a. Culturing yeast cell inoculum in batches on a culture medium with a carbon source ratio of 5-25% by weight / volume after adding the inoculum, a nitrogen source ratio of 1-5% by weight / volume after adding the inoculum, and inducing substances necessary for cell growth and / or enzyme expression in the range of 0.00001-0.1% by weight / volume after adding the inoculum; and b. Activating the yeast cells. The above describes the process of producing superoxide dismutase enzyme from yeast according to patent 1, where the aeration rate is controlled at 1-2 volumes of air per volume of liquid per minute and the temperature of the fermentation tank is controlled at a range of 25-37 degrees Celsius to allow the yeast cells to multiply until the cell concentration at the 600 nm wavelength range (OD600) is in the range of 10-252. The process of producing superoxide dismutase enzyme from yeast according to patent 1, where the starter culture is grown on YPD liquid medium, is carried out under conditions of 25-37 degrees Celsius for 12-24 hours. The process of yeast superoxide dismutase production according to Patent 1, where the yeast cell inoculum amount is in the range of 1-20% by weight per volume of the culture medium.

4. The process of yeast superoxide dismutase production according to Patent 1, where yeast cells can be selected from yeast strains Saccharomyces cerevisiae, Schizosaccharomyces pombe, Kluyveromyces marxianus, Kluyveromyces lactis, Pichia anomala, Hansenia sporauvarum, Candida utilis, Pichiapastoris, Hansenula polymorpha, or Yarrowial ipolytica.

5. The process of yeast superoxide dismutase production according to claim 1, where the desired yeast cells are Saccharomyces cerevisiae.

6. The process of yeast superoxide dismutase production according to claim 1, where the carbon source of the culture medium is selectable from glucose, fructose, sucrose, maltose, lactose, maltotriose, raffinose, corn syrup, glucose syrup, sweeteners, molasses, or starch, either individually or in combination. 7.

7. The process of yeast superoxide dismutase production according to Patent 1, where the nitrogen source of the culture medium is selectable from peptone, soytone, tryptone, malt extract, urea, albumin, yeast extract, or ammonium sulfate, either individually or in combination; 8. The process of yeast superoxide dismutase production according to Patent 1, where the preferred carbon source of the culture medium is corn syrup, glucose syrup, or starch, either individually or in combination; 9. The process of yeast superoxide dismutase production according to Patent 1, where the induction agent is selectable from a group of plant extracts, natural sugars, vitamins, or yeast cofactors and / or superoxide dismutase cofactors, either individually or in combination; 10. The process of yeast superoxide dismutase production according to Patent 1, where the culture medium is supplemented with minerals necessary for cell growth and / or superoxide dismutase expression in the range of 0.001-0.5% by weight per total volume of the culture medium after inoculum addition.
