OCR 16 / 07 / 2567 1. The electron beam irradiation process for fish balls involves the following steps: A. Take 96.0-98.0 percent by weight of red snapper surimi, chop it, and mix it with salt. Amount 2.0-4.0 percent by weight, for 3-5 minutes. B. Stuff the prepared sticky mixture into the casings, filling them with 100-200 grams, and tie both ends securely. C. Expose the device to an electron beam at a level of 3-5 kilograys. d. Boil at 40-50 degrees Celsius for 20-30 minutes, then continue boiling at the same temperature. 80-90 degrees Celsius for 15-20 minutes. Ā: Immerse the fish balls in a cold water bath until their temperature is below 10 degrees Celsius.
