OCR 09WP 14 / 01 / 2569 This invention relates to a formula and process for producing frozen plant-based artificial shrimp. The ingredients include konjac gel, chickpea flour, oyster mushrooms, rice bran oil, shiitake mushroom seasoning powder, shiitake mushroom soy sauce, and shrimp flavor. And orange color from gac fruit pulp powder. Mix them together, then pour into silicone molds and decorate with orange color from the powder. 2. The process for producing frozen plant-based artificial shrimp, as per claim 1, which consists of the following steps: As follows: Preparing konjac gel. a. Mix 0.1 - 0.3% by weight / volume sodium hydroxide in cold water and then... Mix with konjac flour. Blend thoroughly in a food processor for 3-5 minutes. Preparation of frozen plant-based imitation shrimp. B. Mix the konjac gel obtained from step A with chickpea flour, oyster mushrooms, rice bran oil, shiitake mushroom seasoning powder, and soy sauce. Blend the shiitake mushrooms and shrimp flavor in a food processor until all ingredients are smooth. C. Apply orange food coloring from rice bran powder onto the silicone mold. Then, pour the mixture from step B into the mold. Silicone mold D. Heat the mixture in the silicone mold from step C by steaming at a temperature of 80-100°C. Celsius degrees for 15-20 minutes. J. Place the steamed plant-based imitation shrimp (prepared in step D) on the mold and let it rest for 5-10 minutes before removing it. f. Pack the plant-based imitation shrimp products in vacuum bags and freeze them at -18 degrees Celsius. Celsius has produced a frozen plant-based artificial shrimp product.
