Abstract

The process of producing avocado powder involves the following steps: preparing the avocados by washing and sterilizing them. Peel fresh avocados with the peel using a sodium hypochlorite solution. Soak only the flesh at least 0.1-1.0 centimeters from the peel (excluding the green flesh under the peel) in the solution. Sodium metabisulfite is a solution containing its salt and citric acid. Cut the acid into pieces and grind or blend until finely powdered. Weigh this portion as A. Add 2-5 times the amount of water to A (24-5A). Weigh this portion and assign it as B, then add maltodextrin powder. Spray dry using a machine. Spray drying produces avocado powder, which is then packaged in airtight containers or plastic bags. And there is no moisture.

Peel the fruit, using only the flesh at least 0.1-1.0 centimeters from the peel (do not use the green flesh under the peel). C. Soak in a sodium metabisulfite solution with a concentration of 0.1-0.5% by weight / volume. For 5-60 minutes. d. Then, immerse them in a solution containing 0.1-0.5% salt by weight / volume and citric acid. 0.1-0.5% by weight / volume for 5-60 minutes. C. Cut into pieces, then grind or blend until finely powdered. Weigh this portion as A. Add 2-5 times the amount of water to A (2A-5A). C. Weigh this portion and assign it the value B. B. Add 10-20% DE maltodextrin powder (Dextrose Equivalent). At a ratio of 10-50% of B. C. Dry the material using a spray dryer at an inlet temperature of 100-200 degrees Celsius for 1-10 minutes. Until the outlet temperature reaches 20-90 degrees Celsius. J. Obtain the avocado powder and store it in an airtight container or plastic bag, ensuring it is dry.
