OCR 10KL (05 / 05 / 2569) 1. The process of making cold brew black coffee uses a high-pressure process. Pressure Processing (HPP) involves the following steps: A. Grind the Arabica coffee beans. B. Weigh the water and ground coffee beans from A according to the formula, which is 90.5-92.5% water. 7.5-9.5% by weight of finely ground Arabica coffee beans are placed in a plastic bottle. C. Seal the bottle cap tightly. D. Place the bottle from step C into the HPP machine. Step A: Apply a pressure of 400 MPa for 5 minutes. F. Transfer the processed bottles from step E to UV-sterilized packaging. B. Take the bottle from step F and close the lid tightly. C. Store bottles containing cold brew coffee products as described in point B at a temperature below 30 degrees Celsius.
