Abstract

The production process involves soaking the glutinous rice for 12 hours. Mix the watermelon juice with coconut milk, salt, cricket protein powder, and stevia extract sweetener. Steam the rice until cooked, then pour it into a bowl. Pour the prepared mixture into the bowl of cooked glutinous rice and mix thoroughly. Place the bowl in a container, cover to retain heat, and press the cooked glutinous rice into crackers. Pour the rice mixture into a circular mold. Remove the rice crackers from the mold and dry them in the sun for 3 days, or use a convection oven. Heat oil in a pan over medium heat until very hot, then fry the rice crackers.
