Abstract

The invention describes a method for preparing and coating cocoa beans for direct consumption, characterized by: bean selection and pre-treatment to ensure the raw material entering the production line is homogeneous, clean, and suitable for processing; heat treatment to control microorganisms, enhance the desired aroma profile, and balance the bitterness of the beans; pre-treatment to create an initial adhesive interlayer on the surface of the bean to ensure the stability of multi-layer coatings and the adhesion of subsequent layers; functional coating application where base coatings are applied layer by layer; and final drying, stabilization, and polishing steps to ensure the shelf stability, visual appeal, and readiness for packaging of the final product.
