Abstract
The invention relates to a hybrid protein powder containing a peanut milk-based plant protein matrix, whey protein, and inulin, developed for use in the fields of functional foods, sports nutrition, health products, protein supplements, and powdered food ingredients, and the production method of said hybrid protein powder. It involves combining a peanut milk-based plant protein matrix with whey protein to create a hybrid protein structure containing both plant and animal-derived proteins; inulin is used as a prebiotic fiber component, as well as a cryoprotectant and stabilizer contributing to the preservation of the protein structure during freezing and freeze-drying; the final dry product is expected to contain 80-85% by weight of peanut milk powder, 2-10% by weight of whey protein, and 2-5% by weight of inulin; and in the preferred application, these components are expected to constitute approximately 85% by weight, respectively.The process involves using 10% and 5% of the ingredients, selecting and hydrating peanuts, removing the shells after hydration, grinding the peanuts with added water to form a slurry, filtering the resulting slurry to obtain peanut milk, subjecting the peanut milk to pasteurization and cooling, adding whey protein and inulin to the peanut milk matrix and homogenizing it to create a hybrid liquid protein matrix, pre-freezing the resulting hybrid liquid protein matrix, freeze-drying it under low temperature and low pressure conditions to remove the water through sublimation, converting the resulting dry structure into powder form through controlled mechanical grinding and sieving processes, thereby preserving the protein structure and supporting the amino acid profile of peanut protein.This includes product and production method development aimed at enriching the product with prebiotic fiber, improving rehydration and solubility properties, enhancing powder fluidity, reducing caking and clumping tendencies, and obtaining a hybrid protein powder with high storage stability.
