This invention relates to a cooling method for a water-containing substance. The cooling method includes the following steps: a preparatory cooling step in which the temperature of the center portion of the substance is lowered than the temperature of the surface portion of the substance within at least a portion of a temperature range of -5.0°C to -1.0°C.
