Abstract
The objective of this invention is to provide a material that uses soybeans, which have a stable supply, as raw material, and can inhibit the coarsening of ice crystals in food and beverages. The solution involves obtaining a heat-treated product of insoluble soybean dietary fiber or a dried product of heat-treated insoluble soybean dietary fiber whose viscosity before and after homogenization treatment meets a specific range.
