Abstract

This invention discloses a method for preparing peanut hydrolysate, comprising the following steps: mixing peanut material with water and homogenizing it to obtain a peanut slurry; and subjecting the peanut slurry to a hydrolysis treatment using a complex enzyme to obtain the peanut hydrolysate, wherein the complex enzyme comprises a neutral protease, a flavor protease, and a hemicellulase. The peanut hydrolysate contains a low-fat, high-protein, and high-fiber nutrient composition, has a low glycemic index, is rich in branched-chain amino acids, xylobiose, and polyphenols, and possesses antioxidant and gut microbiota-improving effects.

Claims

1. A method for preparing peanut hydrolysate, comprising the following steps: mixing peanut material with water and homogenizing it to obtain a peanut paste; and subjecting the peanut paste to a hydrolysis treatment using a complex enzyme to obtain a peanut hydrolysate containing xylobiose, wherein... The complex enzyme contains neutral protease, flavor protease and hemicellulase. The hydrolysis process is carried out by using a complex enzyme in an amount ranging from 0.05 wt% to 1.0 wt% and at a temperature ranging from 20°C to 60°C.

2. The method as described in request item 1, wherein, The peanut material was subjected to high-pressure cooking before homogenization, and the high-pressure cooking was carried out under a pressure ranging from 1.0 kg / cm2 to 2.2 kg / cm2.

3. A peanut hydrolysate prepared by means of any one of claims 1 to 2, and comprising xylobiose.

4. The peanut hydrolysate as claimed in claim 3, further comprising branched-chain amino acids and polyphenols.

5. The peanut hydrolysate as described in claim 3, having a glycemic index of less than 55.

8. The peanut hydrolysate as described in claim 3, which contains more than 3 g / 100 kcal of dietary fiber.

9. Use of a peanut hydrolysate as claimed in any one of claims 3 to 8 for the preparation of a composition for improving the gut microbiota.

10. A food product comprising a peanut hydrolysate as claimed in any one of claims 3 to 8.
