Abstract
Claims
1. A method for manufacturing a Pickering emulsion containing cellulose nanofibers, comprising: mixing cellulose nanofibers and water, wherein the length of the cellulose nanofibers is greater than 2 μm and less than or equal to 10 μm, and the carboxyl content of the cellulose nanofibers is 0.9 mmol / g to less than 1.2 mmol / g, to obtain an aqueous solution of cellulose nanofibers; and mixing edible oil and the aqueous solution of cellulose nanofibers, and performing a homogenization step to obtain a Pickering emulsion containing the cellulose nanofibers, wherein, based on 100% by weight of the Pickering emulsion containing the cellulose nanofibers, the Pickering emulsion containing the cellulose nanofibers consists of 0.25% to 0.30% by weight of the cellulose nanofibers, greater than 0% and less than 30% by weight of the edible oil, and an equilibrium amount of water, and the homogenization step is performed at a rotation speed of 20,000 rpm to 25,000 rpm.
2. A method for manufacturing a Pickering emulsion containing cellulose nanofibers as described in claim 1, wherein the cellulose nanofibers are obtained from coniferous pulp by a catalytic oxidation step, a mechanical defibrillation step, and a high-pressure homogenization step, wherein the catalytic oxidation step is carried out under alkylpiperidine oxide and metal halide, the mechanical defibrillation step includes ultrasonic oscillation and / or homogenization treatment, and the high-pressure homogenization step is 400 bar to 600 bar.
3. The method for manufacturing a Pickering emulsion containing cellulose nanofibers as described in claim 1, wherein the edible oil comprises animal oil and / or vegetable oil.
4. A method for manufacturing a Pickering emulsion containing cellulose nanofibers as described in claim 3, wherein the animal oil comprises lard, tallow, chicken fat, duck fat, goose fat, shrimp oil and / or fish oil.
5. A method for manufacturing a Pickering emulsion containing cellulose nanofibers as described in claim 3, wherein the vegetable oil comprises cocoa butter, sesame oil, corn oil, soybean oil, brown rice oil, peanut oil, grapeseed oil, camellia oil, sunflower oil, rapeseed oil, olive oil, coconut oil, avocado oil, and / or palm oil.
6. A Pickering emulsion containing cellulose nanofibers, which is prepared by the manufacturing method of the Pickering emulsion containing cellulose nanofibers described in any one of claims 1 to 5, wherein the Pickering emulsion containing the cellulose nanofibers is an oil-in-water emulsion.
7. A food composition comprising 0.05% to 10% by weight of a Pickering emulsion containing cellulose nanofibers as described in claim 6.
8. Use of a Pickering emulsion containing cellulose nanofibers for preparing a food composition for improving obesity, comprising administering a food composition to a subject, wherein the food composition comprises 0.05% to 10% by weight of the Pickering emulsion containing cellulose nanofibers as described in claim 6, thereby increasing the subject's serum adiponectin levels.
9. The use of the Pickering emulsion containing cellulose nanofibers as described in claim 8 for the preparation of a food composition for improving obesity, wherein the subject is a healthy subject or a subject on a high-fat diet.
10. The use of the Pickering emulsion containing cellulose nanofibers as described in claim 8 for the preparation of a food composition for improving obesity, wherein, compared to a control food composition administered to a control subject, which does not contain the Pickering emulsion containing the cellulose nanofibers, the subject's liver damage was reduced.
