Abstract

A food structure for an oil-soluble health-promoting ingredient is provided, comprising: a container, a body, a plurality of oil particles, and the oil-soluble health-promoting ingredient. The container has a containment space, and the body comprises a gel, a paste, a viscous liquid, or a combination thereof. The oil particles are uniformly dispersed within and surrounded by the body, wherein each oil particle has a particle size of 0.01 micrometers to 20 micrometers. The oil-soluble health-promoting ingredient is distributed within each oil particle, thereby forming a stable, non-stratified, and non-oxidized dosage form.

Claims

1. A food structure of an oil-soluble health care ingredient, comprising: a container having a receiving space; a body disposed in the receiving space, the body comprising a gel, a paste, a viscous liquid, or a combination thereof; a plurality of oil particles uniformly dispersed within the body and surrounded by the body, wherein the particle size of each oil particle is from 0.01 micrometers to 20 micrometers; and an oil-soluble health care ingredient distributed in each of the oil particles.

2. The food structure of the oil-soluble health care ingredient as described in claim 1, wherein the particle size of each oil droplet is from 1 micrometer to 10 micrometers.

3. The food structure of the oil-soluble health ingredient as described in claim 1, wherein each oil droplet comprises: an oil core layer; an interface layer covering the oil core layer; and an aqueous layer covering the interface layer.

4. A food structure of an oil-soluble health ingredient as described in claim 3, wherein the oil core layer contains the oil-soluble health ingredient.

A food structure of the oil-soluble health-promoting ingredient as described in claim 4, wherein the oil-soluble health-promoting ingredient comprises fish oil, flaxseed oil, algae oil, avocado oil, lecithin, vitamin A, vitamin D, vitamin E, vitamin K, lutein, Q10, curcumin, eicosapentaenoic acid, docosahexaenoic acid, omega-3 fatty acids, omega-6 fatty acids, omega-9 fatty acids, pumpkin seed oil, coconut oil, medium-chain triglycerides (MCT), krill oil, tamarisk oil, safflower seed oil, lecithin oil, Sichuan pepper oil, sacha inchi oil, salmon oil, white tomato oil, black cumin oil, sea buckthorn fruit oil, sea buckthorn seed oil, sweet almond oil, olive oil, camellia oil, zeaxanthin, astaxanthin, or combinations thereof.

6. A food structure of an oil-soluble health ingredient as described in claim 4, wherein the interface layer comprises lecithin.

7. A food structure of an oil-soluble health ingredient as described in claim 1, wherein the bulk further comprises salts.

The food structure of the oil-soluble health care ingredient as described in claim 1, wherein the total weight of the food structure of the oil-soluble health care ingredient is 100%, the weight percentage of the bulk is 65% to 95%, the weight percentage of the oil particles is 1% to 34.5%, and the weight percentage of the oil-soluble health care ingredient is 0.5% to 25%.

A food structure of an oil-soluble health-promoting ingredient as claimed in claim 1, wherein the gel comprises a gelling agent, and the gelling agent comprises carrageenan gum, konjac gum, locust bean gum, guanylang gum, sanxian gum, gelatin powder, agar powder, agar powder, psyllium husk, chia seeds, flax seeds, or combinations thereof.

10. A food structure of an oil-soluble health-promoting ingredient as described in claim 1, wherein the system is in the form of a strip, rectangle, sphere, bottleneck, ellipse, or cylinder.

A food structure of the oil-soluble health ingredient as claimed in claim 1, comprising the following steps: providing a lecithin solution at a pH value below 4.6; mixing the lecithin solution with the oil-soluble health ingredient to obtain a preliminary mixture; mixing the preliminary mixture with a first colloid and a salt until homogeneous to obtain a pretreated oil-containing raw material, wherein the pretreated oil-containing raw material contains the oil particles; mixing the pretreated oil-containing raw material with a second colloid to obtain the food structure of the oil-soluble health ingredient.
