PRODUCTION PROCESS OF CHITOSOME EPIGALLOCATECHIN GALLAT AND CHITOSOME EPIGALLOCATECHIN GALLAT OBTAINED FROM THIS PROCESS

Abstract

The invention relates to a process for producing chitosome epigallocatechin gallate (EGCG) comprising the following steps: step 1. formation of an epigallocatechin gallate (EGCG)-phospholipid complex, step 2. formation of an EGCG phytosome suspension, step 3. formation of a pre-chitosome suspension containing EGCG, step 4. formation of a chitosome suspension containing EGCG, and step 5. product recovery. The invention also relates to the resulting chitosome epigallocatechin gallate product having an average particle size of less than 300 nm, a particle size distribution coefficient not exceeding 0.30, carrying a positive charge, and having a structure consisting of: an epigallocatechin gallate (EGCG) complex with one or more phospholipids; and an outer chitosan layer covering the complex with a multivalent ion-binding agent. The EGCG chitosome system according to the invention is capable of improving the stability and bioavailability of free EGCG.
