YEAST PREPARATION CONTAINING THE STRAIN Saccharomyces cerevisiae TS-7-9-PDA AND AN IMPROVED PROCESS FOR FERMENTING TRADITIONAL SOYBEAN PASTE USING THIS PREPARATION

Abstract

The invention relates to a yeast preparation containing the Saccharomyces cerevisiae TS-7-9-PDA strain and a process for improving the traditional fermentation of Bần soy sauce using this yeast preparation. The yeast strain was optimally cultured on Hansen medium supplemented with 1% glucose and 1% yeast extract, at pH=6.4, at 30°C for 30 hours, achieving a density of approximately 7.4 × 10⁸ CFU / mL and exhibiting high amylase activity. The preparation was added after the mold fermentation stage, then left to ferment overnight before the soy sauce fermentation.
