Abstract

The invention relates to a method for the simultaneous extraction of polyphenols and caffeine from green tea leaves or green coffee beans, comprising the following steps: i) carrying out the extraction of green tea leaves or green coffee beans in water by ultrasonic-assisted extraction (UAE) with a transducer power of 240W to 600W for a duration of 3 to 60 minutes, at a temperature of 60°C to 90°C; in which the mass ratio between each type of green tea leaf or green coffee bean material and water is in the range of 1:10 to 1:50; in which intermittent ultrasonication is performed with an on / off cycle in seconds in the range of 5:1 to 20:1; filtering and recovering the green tea leaf or green coffee bean extract; and iii) concentrate the green tea leaf or green coffee bean extract in Step ii) using a vacuum rotary evaporator at 80°C for approximately 90 minutes, and obtain the green tea leaf or green coffee bean extract.
