Abstract
The invention relates to a method for producing anthocyanin-containing microencapsulated powder from the calyx of Hibiscus sabdariffa L., comprising: i) mixing and homogenizing microcrystalline cellulose solution (MCC solution) and cinnamon essential oil by sonication to create a Pickering cinnamon essential oil emulsion system; in which the volume ratio between the microcrystalline cellulose solution (MCC) and cinnamon essential oil is between 100:1 and 200:1; ii) mixing and homogenizing hydroxypropyl methyl cellulose solution (HPMC solution), glycerol, and the Pickering cinnamon essential oil emulsion system, and obtaining an antimicrobial film-forming solution; in which the volume ratio between the HPMC solution, glycerol, and the Pickering cinnamon essential oil emulsion is between 190:1:10; and iii) proceed to create a film from the antimicrobial film-forming solution obtained in Step ii) and dry at 60°C, and obtain an antimicrobial film.
