Abstract

The invention relates to a process for producing instant snack pasta from resistant starch rice, comprising the following steps: Step 1: preparing rice starch with increased resistant starch content from resistant starch rice; Step 2: preparing resistant starch rice pasta; Step 3: preparing resistant starch instant snack pasta; Step 4: creating seasoning sauce; Step 5: packaging the resistant starch instant snack pasta obtained in Step 3 and the seasoning sauce obtained in Step 4 into secondary packaging, resulting in the instant snack pasta product.
