Abstract

The present invention relates to a method for manufacturing a food material in the fractionated state. This method comprises the following steps: a. production of a composition in the fractionated state from a mixture of at least one granular matrix comprising a source of starch in the fractionated state and of a saccharide or from a mixture of at least one source of starch in the fractionated state and of at least one saccharide; b. said composition is baked in the fractionated state obtained, at a temperature of between 60°C and 250°C, preferably greater than or equal to 180°C and less than 200°C; c. said material in the fractionated state obtained is sieved.
