Abstract

A multifunctional device, to be used alternatively or even simultaneously for measuring the density of a fermenting food matrix inside a tank (S) and for injecting liquids and / or gases into the matrix itself, comprises a curved hollow rod duct (10), at least one second duct (20) located inside the rod (10), and a differential sensor for measuring the pressure difference detected between two points located at different levels of the matrix. The ducts can also be used for injecting liquids and / or gases into the matrix.
