[0004] The present invention pertains to a method of producing a new type of modified, plant-based egg replacer which comprises a combination of oligoglycerol fatty acid esters, monoglyceride, and high protein vegetable protein sources. The modified, plant-based egg replacer is highly suitable for use in the production of egg-reduced or egg-free batter and related cakes. The invention furthermore pertains to the modified, plant-based egg replacer as such, as well as uses and related baked products.

[0006] Plant-based egg replacers have been available for a number of years and are conventionally made of mixtures of plant protein and various stabilisers.
[0007] For example, US8287930B2 discloses compositions for reducing or replacing the egg and emulsifier content in baked goods and baked good mixes. The compositions include a wheat protein isolate and an emulsifier, and optionally a flow agent. An exemplary composition of US8287930B2 includes a wheat protein isolate, a propylene glycol ester, a glyceride, and a lecithin.
[0008] US20130052304A1 discloses an egg substitute composition comprising wheat protein, emulsifiers, at least one fat or oil, and polysaccharides, and optionally supplementary proteins and food gums. The composition preferably includes 1-90% wheat protein, 1-30% fat or oil and 5-30%, polysaccharides. Optionally 0-50% supplementary proteins, 0-30% emulsifiers, 0-10% food gums, 0-3% reducing-oxidant agents and 0-5% calcium and ferrous salts.
[0009] WO2024054873A1 discloses egg substitute compositions that are configured to be used as substitutes for traditional eggs as a food product and / or for use in preparing food products. In general, these compositions may include a non-denatured potato protein and a fat, and are formulated to have textural properties and taste equivalent to traditional egg. [0010] SUMMARY OF THE INVENTION
[0011] The present inventors have found functional short-comings of conventional plant-based egg replacers and have discovered a new type of modified, plant-based egg replacer that is highly suitable for production of egg-reduced or even egg-free batter and cake prepared from egg-reduced or even egg-free batter. More specifically, the inventors have found that plant-based egg replacers containing an emulsifier system comprising oligoglycerol esters of fatty acids (OGE) enable the production of stable aerated, egg-reduced batters of lower density.
[0012] Additionally, the present modified, plant-based egg replacers have been found highly suitable for high fat batter and resulting high fat cakes, such as e.g. pound cake or muffins.
[0013] An aspect of the invention pertains to a method of producing a modified, plant-based egg replacer, preferably suitable as an ingredient for the production of aerated batter, the method comprising the steps of:
