Abstract

The invention relates to a dairy product analogue comprising from 01 to 0.3 wt% of balsamic vinegar; from 0.1 to 0.5 wt% of fermented cabbage juice; from 0.5 to 2.0 wt% of maple syrup; from 0.1 to 1.0 wt% of coconut oil; and from 0.1 to 1.5 wt% of milk fat. Description

[0001] DAIRY PRODUCT ANALOGUE

[0002] TECHNICAL FIELD

[0003] The present invention relates generally to the field of dairy product analogues, in particular milk analogues. For example, the present invention relates to dairy product analogues which comprise balsamic vinegar, fermented cabbage juice, maple syrup, coconut oil and milk fat, and a process for preparing such dairy product analogues.

[0004] BACKGROUND OF THE INVENTION

[0005] Some consumers wish to reduce or even stop their consumption of milk and dairy products derived from milk. For example, this can be for reasons of lactose intolerance, dairy allergies, or environmental sustainability.

[0006] To meet this growing consumers' demand, food companies propose dairy products analogues, including milk analogues, on the market worldwide. These dairy products analogues are prepared with plant ingredients including plant protein ingredients. They may comprise limited amount of milk ingredients or they may even be free from milk ingredients compared to standard dairy products.

[0007] Dairy product analogues, in particular milk analogues exhibit sensory defects, such as off-notes, compared to corresponding standard dairy products due to the use of plant ingredientsand the limited or absence of milk ingredients in their preparation. In view of these sensory defects, the sensory properties of dairy product analogues, in particular milk analogues are not fully satisfactory and there is room for improvement. In particular, they are generally characterized by unpleasant green, pulses, cereal aromatic notes while they are generally lacking dairy or fruity notes.

[0008] It would therefore be desirable to provide a dairy product analogue, in particular a milk analogue, with improved sensory properties.

[0009] Any reference to prior art documents in this specification is not to be considered an admission that such prior art is widely known or forms part of the common general knowledge in the field.

[0010] SUMMARY OF THE INVENTIONThe object of the present invention is to improve the state of the art, and in particular to provide a dairy product analogue and a process that overcomes the problems of the prior art and addresses the needs described above, or at least to provide a useful alternative.

[0011] The inventors were surprised to see that the object of the present invention could be achieved by the subject matter of the independent claims. The dependent claims further develop the idea of the present invention.

[0012] Accordingly, an embodiment of the invention proposes a dairy product analogue comprising:

[0013] from 0.1 to 0.3 wt% of balsamic vinegar;

[0014] from 0.1 to 0.5 wt% of fermented cabbage juice;

[0015] from 0.5 to 2.0 wt% of maple syrup;

[0016] from 0.1 to 1.0 wt% of coconut oil; and

[0017] from 0.1 to 1.5 wt% of milk fat.

[0018] In some embodiments, the dairy product analogue further comprises at least 0.5 wt% of plant protein.

[0019] In some embodiments, the plant protein comprises, preferably consists of plant protein selected from a group consisting of cereal protein, pulse protein and combination thereof.

[0020] In some embodiments, the plant protein is originated from soybean.

[0021] In some embodiments, the total protein content of the dairy product analogue is at least 1.5 %, preferably at least 1.75 %.

[0022] In some embodiments, the total fat content of the dairy product analogue is less than 3 %, preferably less than 2 %, more preferably less than 1.75 %.

[0064] It has been discovered that the use of the combination of balsamic vinegar, fermented cabbage juice, maple syrup, coconut oil and milk fat in dairy product analogues, in particular milk analogues, improves their sensory properties. In particular, the taste of dairy product analogues is improved in presence of the combination of these particular ingredients. Moreover, acidic ingredients / agents are generally known to induce plant proteins destabilization / flocculation and so tend to adversely affect the sensory properties, in particular the texture of dairy product analogues, in particular milk analogues. Without wishing to be bound by theory, it is believed that the texture of dairy product analogues may also be improved in presence of the combination of these particular ingredients even though balsamic vinegar is acid.

[0065] In an embodiment, the balsamic vinegar may be white balsamic vinegar, black balsamic vinegar, or a mixture thereof.

[0066] In an embodiment, the balsamic vinegar is liquid or powdered. In some preferred embodiments, the balsamic vinegar is liquid. Liquid balsamic vinegar may be advantageous compared to powdered balsamic vinegar. Powdered balsamic vinegar may contain further ingredients, in particular carrier matrix, that may be undesirable as they can, for example, impact nutritional and / or sensory properties (e.g. the carrier matrix comprising carbohydrates). Additionally, handling liquid balsamic vinegar may be more convenient compared to powders (e.g. no reconstitution needed).

A person skilled in the art should know the right amount of water for rehydration depending on the composition of the powdered balsamic vinegar.

The mixture was then homogenized in its hot state at 50-60°C, 250 bar and heated again at 87-95°C for 3min. After addition of flavours, cocoa powder, and other ingredients, the mixture was mixed for another 5-6min at 60°C to obtain a concentrated version of the dairy hybrid product. The final dairy hybrid product was obtained after dilution to a final total solids content of 13.5%.The recipe of the standard dairy hybrid with plant- and dairy-protein and the recipe of the formulation according to the invention are given in Table 1. Based on a TS (total solids) % of 13.5%, the protein content was at 1.75% and total sugar content was at 7.5%.

CLAIMS1. A dairy product analogue comprising:from 0.1 to 0.3 wt% of balsamic vinegar;from 0.1 to 0.5 wt% of fermented cabbage juice;from 0.5 to 2.0 wt% of maple syrup;from 0.1 to 1.0 wt% of coconut oil; andfrom 0.1 to 1.5 wt% of milk fat.

2. The dairy product analogue according to claim 1, further comprising at least 0.5 wt% of plant protein.

3. The dairy product analogue according to claim 2, wherein the plant protein comprises, preferably consists of plant protein selected from a group consisting of cereal protein, pulse protein and combination thereof.

4. The dairy product analogue according to claim 3, wherein the plant protein is originated from soybean.

5. The dairy product analogue according to any one of claims 1 to 4, wherein the total protein content of the dairy product analogue is at least 1.5 %, preferably at least 1.75 %.

6. The dairy product analogue according to any one of claims 1 to 5, wherein the total fat content of the dairy product analogue is less than 3 %, preferably less than 2 %, more preferably less than 1.75 %.

7. The dairy product analogue according to any one of claims 1 to 6, wherein the total sugar content of the dairy product analogue is less than 10 %, preferably less than 9 %, more preferably less than 8%.

8. The dairy product analogue according to any one of claims 1 to 7, wherein the total solids of the dairy product analogue is less than 20 %, preferably less than 17.5 %, more preferably less than 15 %.

9. The dairy product analogue according to any one of claims 1 to 8, which is a liquid beverage ora powdered beverage.

A process for preparing a dairy product analogue comprising steps of:a) dispersing a plant protein ingredient with an aqueous liquid to form a plant protein dispersion,b) mixing the plant protein dispersion of step a) with additional ingredients, the additional ingredients comprising:from 0.1 to 0.3 wt% of balsamic vinegar;from 0.1 to 0.5 wt% of fermented cabbage juice;from 0.5 to 2.0 wt% of maple syrup;from 0.1 to 1.0 wt% of coconut oil; andfrom 0.1 to 1.5 wt% of milk fat,c) homogenizing the mixture of step b).

11. The process according to claim 10, further comprising a step of:d) heat treating the mixture of step b) before step c), or the homogenized mixture of step c).

12. The process according to claim 10 or 11, further comprising a step of:e) drying the dairy product analogue.

13. The process according to any one of claims 10 to 12, wherein the dairy product analogue is according to any one of claims 1 to 9.
