Abstract

An interesterified oil blend of a liquid oil, a lauric fat and a medium chain triglycerides (MCT) oil, having based upon the fatty acid profile of the interesterified oil blend: fatty acid residues of C8: 0 in an amount of 2 to 10 wt. %; fatty acid residues of C10: 0 in an amount of 1 to 8 wt. %; fatty acid residues of C12: 0 in an amount of 6 to 20 wt.%; fatty acid residues of C18: 1 in an amount of 42 to 70 wt. %; and fatty acid residues of C18: 2 in an amount of 2 to 10 wt. %; and the process for making it and its use in food products, feed products, cosmetic products or pharmaceutical products.

Description

INTERESTERIFIED MEDIUM-LONG CHAIN TRIGLYCERIDESFIELD OF THE INVENTION

[0001] The present invention relates to an interesterified oil blend of a liquid oil, a lauric fat and a medium chain triglycerides (MCT) oil and a process for preparing it.BACKGROUND

[0002] There is a growing nutritional trend favoring non-hydrogenated fats and low saturated fats for use in coffee creamer concentrates and creamers for milk tea. Additionally, meeting the sensory expectations of consumers has become a crucial requirement for various applications.

[0003] Current solutions often struggle to meet both nutritional requirements and indulgence factors, such as taste and aroma.

[0004] There thus still remains a need for a fat that fulfills the nutritional and sensory trends and is suitable for further applications.

[0005] This invention addresses these challenges by offering a comprehensive solution that satisfies both aspects.SUMMARY OF THE INVENTION

[0006] The present invention relates to an interesterified oil blend of a liquid oil, a lauric fat and a medium chain triglycerides (MCT) oil, having:

[0007] a. fatty acid residues of C8: 0 in an amount of from 2 to 10 wt. %, based upon the fatty acid profile of the interesterified oil blend;

[0008] b. fatty acid residues of C10: 0 in an amount of from 1 to 8 wt. %, based upon the fatty acid profile of the interesterified oil blend;

[0009] c. fatty acid residues of C12: 0 in an amount of from 6 to 20 wt. %, based upon the fatty acid profile of the interesterified oil blend;

[0010] d. fatty acid residues of C18: 1 in an amount of from 45 to 70 wt. %, based upon the fatty acid profile of the interesterified oil blend;

[0011] e. fatty acid residues of C18: 2 in an amount of from 2 to 10 wt. %, based upon the fatty acid profile of the interesterified oil blend.

[0012] It further relates to process for making the interesterified oil blend of the present invention and the process is comprising the following steps:

[0013] a) Interesterifying a blend of liquid oil, a lauric fat and a medium chain triglycerides

[0014] (MCT) oil in presence of an enzyme;

[0015] wherein the MCT oil is present in an amount of from 1 to 20 wt. %;

[0016] wherein the liquid oil is present in an amount of from 40 to 90 wt. %;

[0017] wherein the lauric fat is present in an amount of from 5 to 40 wt. %.

[0018] Finally, it relates to the use of the claimed interesterified oil blend in food products, feed products, cosmetic products or pharmaceutical products.DETAILED DESCRIPTION

[0019] The present invention is elucidated below with a detailed description. When used in this specification and claims, the terms "comprises" and "comprising" and variations thereof mean that the specified features, steps or integers are included. The terms are not to be interpreted to exclude the presence of other features, steps or components.

[0022] The present invention relates to an interesterified oil blend of a liquid oil, a lauric fat and a medium chain triglycerides (MCT) having:

[0023] a. fatty acid residues of C8: 0 in an amount of from 2 to 10 wt. %, based upon the fatty acid profile of the interesterified oil blend;

[0024] b. fatty acid residues of C10: 0 in an amount of from 1 to 8 wt. %, based upon the fatty acid profile of the interesterified oil blend;

[0025] c. fatty acid residues of C12: 0 in an amount of from 6 to 20 wt. %, based upon the fatty acid profile of the interesterified oil blend;

[0026] d. fatty acid residues of C18: 1 in an amount of from 42 to 70 wt. %, based upon the fatty acid profile of the interesterified oil blend;

[0027] e. fatty acid residues of C18: 2 in an amount of from 2 to 10 wt. %, based upon the fatty acid profile of the interesterified oil blend.

[0028] A medium-chain triglyceride (MCT) is a triglyceride with fatty acids of 8 to 12 carbon atoms.

[0029] The presence of these different fatty acids in MCT oils depends on the source and the extraction process. For example, some MCT oils are derived from coconut oil, which naturally contains a higher proportion of lauric acid (C12: 0) .

[0030] Other MCT oils might be specifically formulated to include only C8: 0 and C10: 0 fatty acids.

[0031] In an aspect of the invention, the MCT oil is comprising more than 45 wt. %of C8: 0 fatty acid residues.

[0032] In an aspect of the invention, the MCT oil is comprising more than 35 wt. %of C10: 0 fatty acid residues.

[0033] In an aspect of the invention, the MCT oil is comprising more than 50 wt. %of C8: 0 fatty acid residues and more than 40 wt. %of C10: 0 fatty acid residues.

[0034] In an aspect of the invention, the MCT oil is comprising from 50 wt. %to 60 wt. %of C8: 0 fatty acid residues and from 40 wt. %to 50 wt. %of C10: 0 fatty acid residues.

[0035] Long-chain fatty acids (LC-FA) are fatty acids made with more than 12 carbon atoms; preferably from 16 to 24 carbon atoms.

[0073] For the purposes of the present invention, the lauric oil will preferably be a fractionated palm kernel oil, more preferably a stearin fraction of palm kernel oil (palm kernel stearin, or PKS) .

[0084] It further relates to process for making the claimed interesterified oil blend and the process is comprising the following steps:

[0085] a) Interesterifying a blend of liquid oil, a lauric fat and a medium chain triglycerides (MCT) oil in presence of an enzyme;

[0086] wherein the MCT oil is present in an amount of from 1 to 20 wt. %;

[0087] wherein the liquid oil is present in an amount of from 40 to 90 wt. %;

[0088] wherein the lauric fat is present in an amount of from 5 to 40 wt. %.

[0089] In an aspect, the interesterification of step a) according to the invention is performed with an enzymatic esterification step using a lipase enzyme.

[0090] Typically lipases or esterases are used. The method may offer high selectivity, yielding desired products with few unwanted by-products.

[0091] In a further aspect, the lipase enzyme used in step ii) according to the invention is obtained from a species selected from the group consisting of Thermomyces lanuginosus, Candida antarctica lipase B, Candida cylindracea, Penicillium roqueforti or Burkaholderia cepaciaz, Rhizomucor miehei, Rhizopus oryzea, Rhizopus niveus, Rhizopus delemar and a combination of two or more lipase enzymes obtained from two or more species thereof, preferably from Thermomyces lanuginosus, more preferably from Thermomyces lanuginosus, which is immobilized.

[0093] The enzymatic interesterification reaction can be performed in a packed bed reactor where the oil blend can be pumped through the packed bed reactor with a LHSV (Liquid Hourly Space Velocity) for the substrate oil of from 0.3 to 3 L /  (L*h) .

[0094] The typical reaction time is from 4 to 24 hours, and may be optimized based on the enzyme activity decay profile.

[0095] Refining and purifications steps

[0096] In an aspect of the invention, the process of the present invention is further comprising the following step:

[0097] i) Refining of the interesterified oil blend obtained in step a) (=interesterification step) , preferably by a deodorization step

[0098] Typical refining steps are bleaching and / or deodorization.

[0099] Depending on the quality of the oil after enzymatic interesterification, a bleaching step may be applied with bleaching earth.

[0100] In an aspect of the invention, the refining step applied to the interesterified oil blend includes a deodorization step at a temperature of 220 to 250℃.

[0101] In an aspect of the invention, the deodorization is taking place at a temperature from 220 to 230℃.

[0102] Deodorization is typically carried out at elevated temperatures and reduced pressure. The precise temperature and pressure may vary depending on the nature and quality of the oil being processed. The pressure, for instance, will preferably be not greater than 10 mbar but certain aspects of the invention may benefit from a pressure below or equal to 5 mbar, e.g. 1 -3 mbar. The temperature in the deodorizer may be varied as desired to optimize the yield and quality of the deodorized oil.

[0103] The deodorization step is taking place for a period of time from 20 min to 80 min, from 30 min to 60 min, or from 35 min to 55 min.

[0104] The deodorization step is performed in the presence of sparge steam in a range of from 0.50 to 2.50 wt. %, from 0.75 to 2.00 wt. %, based on amount of oil and at an absolute pressure of 10 mbar or less, 7 mbar or less, 5 mbar or less.

[0106] In an aspect of the invention, the interesterified oil blend is purified before step i) , by a molecular distillation at a temperature of from 150℃ to 210℃.

[0107] Molecular distillation, such as short-path evaporation, also called short-path distillation is a distillation technique that involves the distillate travelling a short distance, often only a few centimetres, and it is normally done at reduced pressure. With short path distillation, a decrease of boiling temperature is obtained by reducing the operating pressure. It is a continuous process with very short residence time. This technique is often used for compounds which are unstable at high temperatures or to purify small amounts of compounds. The advantage is that the heating temperature can be considerably lower (at reduced pressure) than the boiling point of the liquid at standard pressure. Additionally, short-path evaporation allows working at very low pressure.

[0108] Different types of short-path evaporation apparatus can be used that are well known to the skilled person. Examples are, but are not limited to, falling film, centrifugal, or wiped film evaporation apparatus. Preferably the short-path evaporation of the current process is performed in a wiped film evaporation apparatus.

[0109] The short-path evaporation is performed at a pressure below 1 mbar, preferably below 0.1 mbar, below 0.05 mbar, more preferably below 0.01 mbar, most preferably below 0.001 mbar.

[0114] Finally, it relates to the use of the claimed interesterified oil blend in product chosen from the group consisting of food products, feed products, pharmaceutical products, personal care products and industrial products.

[0115] In an aspect of the invention, said product is comprising the claimed interesterified oil blend in an amount of at least 10 wt. %, preferably at least 20 wt. %, of the total weight of the product.

[0116] In an aspect of the invention, said product is comprising the claimed interesterified oil blend in an amount of up to 70 wt. %, preferably up to 50 wt. %, more preferably up to 30 wt. %.

[0125] The present invention is further elucidated based on the examples below which are illustrative only and not considered limiting to the present invention.

[0126] 1. Analysis methods

[0127] The triglycerides content was determined according to the guideline described in Group standards T / CCOA 60-2023, by Gas Chromatography. The sample to be measured was dissolved in n-hexane and detected by a gas chromatograph equipped with a hydrogen flame detector to be qualitatively retained for retention time and quantified by area normalization.

[0128] The method allows to measure the total content of triglycerides but does not distinguish between the isomers, meaning the total content of triglycerides cover symmetrical and asymmetrical triglycerides. This means, when mentioning a specific triglyceride (e.g. LaOO) , all positional triglycerides are included (e.g. isomers such as LaOO, OLaO, OOLa) . This approach applies for all triglycerides mentioned for the interesterified oil blend of the current invention.

[0129] The Fatty Acid Composition was determined according to the method GB 5009.168, expressed in weight percentage.

[0130] The Solid Fat Content was determined according to the method IUPAC 2.150 (a) .

[0132] Example 1

[0133] An oil blend was made with 80 wt. %high oleic sunflower oil, 15 wt. %palm kernel stearin and 5 wt. %MCT oil. The MCT oil had the following fatty acid profile: C6: 0 of 0.2 wt. %, C8: 0 of 56 wt. %, C10: 0 of 43.6 wt. %, C12: 0 of 0.1 wt. %.

[0134] The oil blend was interesterified and refined according to the process described below. The characterization of the interesterified oil blend (example 1) can be seen in Table 2.

[0136] An oil blend was made with 70 wt. %high oleic sunflower oil, 20 wt. %palm kernel stearin and 10 wt. %MCT oil. The MCT oil had the following fatty acid profile: C6: 0 of 0.2 wt. %, C8: 0 of 56 wt. %, C10: 0 of 43.6 wt. %, C12: 0 of 0.1 wt. %.

[0137] The oil blend was interesterified and refined according to the process described below. The characterization of the interesterified oil blend (example 2) can be seen in Table 2 and Table 4.

[0149] The interesterification of the oil blend was performed by using a packed bed reactor (packed with  TLIM (from Novozyme) ) .

Claims

1.An interesterified oil blend of a liquid oil, a lauric fat and a medium chain triglycerides (MCT) oil, havinga. fatty acid residues of C8: 0 in an amount of from 2 to 10 wt. %, based upon the fatty acid profile of the interesterified oil blend;b. fatty acid residues of C10: 0 in an amount of from 1 to 8 wt. %, based upon the fatty acid profile of the interesterified oil blend;c. fatty acid residues of C12: 0 in an amount of from 6 to 20 wt. %, based upon the fatty acid profile of the interesterified oil blend;d. fatty acid residues of C18: 1 in an amount of from 42 to 70 wt. %, based upon the fatty acid profile of the interesterified oil blend;e. fatty acid residues of C18: 2 in an amount of from 2 to 10 wt. %, based upon the fatty acid profile of the interesterified oil blend.2.The interesterified oil blend according to claim 1, havinga. tri-saturated triglycerides (S3) content of from 1 to 18 wt. %, preferably of from 2 to 17 wt. %;b. di-saturated triglyceride (S2U) of from 18 to 48 wt. %, preferably of from 20 to 45 wt. %;c. di-unsaturated triglyceride (SU2) of from 25 to 43 wt. %, preferably of from 28 to 41 wt. %.3.The interesterified oil blend according to claim 1 or 2, havinga. triglyceride CyLaO (C8: 0 / C12: 0 / C18: 1) in an amount of from 1 to 7 wt. %, based upon the glyceride content of the interesterified oil blend;b. triglyceride CaLaO (C10: 0 / C12: 0 / C18: 1) in an amount of from 1 to 6 wt. %, based upon the glyceride content of the interesterified oil blend;c. triglyceride CaOO (C10: 0 / C18: 1 / C18: 1) in an amount of from 2.5 to 7 wt. %, based upon the glyceride content of the interesterified oil blend;d. triglyceride LaOO (C12: 0 / C18: 1 / C18: 1) in an amount of from 7 to 15 wt. %, based upon the glyceride content of the interesterified oil blend;e. triglyceride OOO (C18: 1 / C18: 1 / C18: 1) in an amount of from 5 to 30 wt. %, based upon the glyceride content of the interesterified oil blend;Wherein Cy=caprylic acid (C8: 0) ; Ca=capric acid (C10: 0) ; La=lauric acid (C12: 0) ; O=oleic acid (C18: 1) .4.The interesterified oil blend according to any one of the preceding claims having a saturated fatty acid (SAFA) content of from 20 to 55 wt. %.5.The interesterified oil blend according to any one of the preceding claims wherein the oil blend is having an oxidative stability index (OSI) of more than 20 hours, measured at 110℃.6.The interesterified oil blend according to any one of the preceding claims wherein the MCT oil is present in an amount of from 1 to 20 wt. %, preferably from 5 to 15 wt. %7.The interesterified oil blend according to any one of the preceding claims wherein the liquid oil is present in an amount of from 40 to 90 wt. %, preferably from 50 to 85 wt. %.8.The interesterified oil blend according to any one of the preceding claims wherein the lauric fat is present in an amount of from 5 to 40 wt. %, preferably from 10 to 35 wt. %.9.A process for making the interesterified oil blend according to anyone of claims 1 to 8 and the process is comprising the following steps:a) Interesterifying a blend of liquid oil, a lauric fat and a medium chain triglycerides (MCT) oil in presence of an enzyme;wherein the MCT oil is present in an amount of from 1 to 20 wt. %;wherein the liquid oil is present in an amount of from 40 to 90 wt. %;wherein the lauric fat is present in an amount of from 5 to 40 wt. %.10.The process according to claim 9 wherein the enzyme is a lipase.11.The process according to claim 9 or 10 wherein the process is further comprising the following step:i. Refining of the interesterified oil blend of step a) .12.The process according to anyone of claims 9 to 11 wherein the refining of the interesterified oil blend includes a deodorization step at a temperature of 220 to 250℃.13.The process according to anyone of claims 9 to 12 wherein the interesterified oil blend is treated before the refining step i) by a molecular distillation at a temperature of from 150℃ to 210℃.14.Use of the interesterified oil blend according to any one of claims 1 to 8 in food products, feed products, cosmetic products or pharmaceutical products.15.The use according to claim 14 wherein the interesterified oil blend improves the flavor of the food product, preferable the flavor of a beverage.
