Description

LOW SATURATED FAT COMPOSITIONSField of the Invention

[0001] The invention relates to a hard fat base, a fat composition, the food product containing it and the use of fat composition to reduce the saturated fat content. Background of the Invention

[0002] The food industry requires that oil and fats have good plasticity. For some special applications, such as fillings, it requires a wide range of operating temperatures and fine crystallization texture.

[0003] WHO, along with CDC and FDA, urges people to limit their intake of saturated fats, as many experts have linked it with cardiovascular diseases.

[0004] Most technologies focused on esterification processes or using hydrogenated oil to make low saturated oil and fats, but it is still difficult to get the cream fats with good plasticity and heat stability especially at high temperature.

[0005] There are needs to provide oil compositions that have a lower saturated fatty acid content and having good plasticity, allowing to operate a wide range of temperatures and maintaining a fine crystallization texture.

[0006] The present invention provides such a solution.Summary of the Invention

[0007] The current invention relates to a fat composition consisting of:

[0008] a) from 2 wt. %to 12 wt. %palm stearin having an iodine value (IV) of not more than 16; based upon the weight of the fat composition

[0009] b) from 1 to 14 wt. %mono-di-glycerides based upon the weight of the fat composition;

[0010] c) from 85 wt. %to 95 wt. %of liquid oil based upon the weight of the fat composition; and

[0011] d) optionally a palm stearin having an iodine value (IV) of from 30 to 35; and

[0012] wherein the liquid oil is liquid at 20℃.

[0013] Furthermore, it relates to food application comprising the claimed fat composition and a starch component in an amount of from 8 to 18 wt. %based upon the weight of the food application.

[0014] It relates to a comprising the claimed food application and a food ingredient, preferably the food product is a biscuit cream, a biscuit dough, a spread or a filling.

[0015] Finally it relates to the use of the claimed fat composition to reduce the fat content, preferably the saturated fat content in a food product.Detailed Description

[0129] - cream stability is acceptable after tempering at 25℃ for 3 hour.

[0130] - texture hardness of the cream prepared with claimed fat composition is comparable to the hardness of comparative example at low temperature, but was even better at higher temperature.

[0131] EXAMPLES

[0132] Analytical methods

[0133] Standard methods have been used to analyze the fat samples.

[0134] The solid fat content (SFC) is measured according to the standard AOCS Cd 16b-93 method I. The method is for non-temper fats.

[0135] Iodine Value (IV) was measured according to AOCS Cd 1c-85.

[0136] Fatty acid profile was measured according to AOCS Ce 1 h-05 method.

[0137] Texture test of the cream

[0138] The cream sample was put in a 40mL disposable plastic sampling cup (inner diameter of the mouth: 39mm; bottom diameter: 36mm; total height: 53mm) and stored at target temperature (25, 33℃) . The hardness was measured at by means of a TEXTURE ANALYSER model EZ-Turbo-SX, using a probe of 6 mm diameter, with a probe penetration rate of 30 mm  / min, and a depth of 15 mm. The hardness was measured after 14~16h storage at 25 and 33℃.

[0139] Comparative Example 1

[0140] A blend was made with 75wt. %palm olein and 30 wt. %palm stearin having iodine value (IV) of 30 to 35.

[0141] Example 1 - hard fat base and fat composition according to the invention

[0142] The hard fat base is a blend of palm stearin having iodine value of less than 16, and mono-diglycerides. (weight ratio 6: 3) .

[0143] The corresponding fat composition is a blend of 1.4 wt. %palm olein, 0.6 wt. %palm stearin (IV 30-35) , 89 wt. %canola oil, 3 wt. %mono-diglycerides and 6 wt. %of palm stearin (IV <16) .
