Abstract
Description
[Technical field]
[0001] The present invention relates to novel flavoring agents, flavoring compositions, and products containing the same, in which flavor components are released by heat. [Background technology]
[0002] Flavoring agents can be added to foods and smoking articles to further improve the taste. Smoke or aerosol generated from a smoking article moves from upstream to downstream and is delivered to the smoker, and is manufactured to give the smoker a sense of smoking satisfaction. There are various factors that determine smoking satisfaction, but the most important is the tobacco taste that the smoker feels. Smokers want to enjoy various tobacco flavors from a single smoking article, and cigarette manufacturers add flavoring substances (e.g., flavoring agents) to satisfy this desire of smokers, allowing the smoker to experience various flavors and tastes.
[0003] Conventional flavoring agents have a high possibility of decomposing their chemical structures at room temperature during long-term storage of the smoking medium, and the flavor components volatilize, making it difficult to fully express the flavor that can enhance the tobacco flavor during smoking, or the flavor does not last long or the tobacco flavor changes as smoking time passes. For this reason, it is necessary to develop a flavoring agent that can increase smoking satisfaction during smoking. Flavoring agents are used to add various flavors to foods, but when the foods are processed and / or stored for long periods of time, the flavors often volatilize and are released and disappear. For this reason, it is necessary to develop a flavoring agent that can prevent or delay the release of volatile flavors to increase the storage life and fully express the flavor when used by consumers. Summary of the Invention [Problem to be solved by the invention]

DETAILED DESCRIPTION OF THE PREFERRED EMBODIMENTS
[0026] Hereinafter, the embodiments of the present invention will be described in detail with reference to the accompanying drawings. In the description of the present invention, if a detailed description of related known functions or configurations is deemed to be likely to unnecessarily obscure the gist of the present invention, the detailed description will be omitted. Furthermore, the terms used in this specification are terms used to appropriately express preferred embodiments of the present invention, and may vary depending on the intention of a user or operator or custom in the field to which the present invention belongs. Therefore, the definitions of these terms should be based on the contents of the entire specification. The same reference numerals shown in each drawing indicate the same members.
[0027] Throughout this specification, when an element is said to be "on" another element, this includes not only when the element is in contact with the other element, but also when there is another element between the two elements.
[0028] Throughout the specification, when a part "comprises" a certain element, this does not mean to exclude other elements, but may further include other elements.
[0029] Hereinafter, the novel flavoring agent of the present invention and the use of the flavoring agent will be described in detail with reference to examples and drawings, but the present invention is not limited to these examples and drawings.
[0030] The present invention relates to a novel flavoring agent, which, according to one embodiment of the present invention, is capable of releasing flavor components by pyrolysis when heat is applied.
[0031] According to an embodiment of the present invention, the flavoring agent may be a compound represented by the following Chemical Formula 1: [Chemical formula 1] [ka]
[0032] In one embodiment of the present invention, in the above formula 1, the fragrance compound has a carbonate linking group ( [ka] ), and when the compound of Chemical Formula 1 is heated, it is thermally decomposed into a fragrance compound and a lactone compound, thereby expressing the flavor component. For example, the compound of Chemical Formula 1 reacts with the hydroxyl group of the fragrance compound through the ring-opening mechanism of the lactone compound to covalently bond the fragrance compound through the carbonate linking group. This can act as a protective group that prevents the compound from being converted into a lactone compound through ring closure at room temperature (rt) and / or a temperature close thereto. The compound of Chemical Formula 1 has structural stability and low volatility at about room temperature (rt) or a temperature close thereto, and when heated, the carbonate linking group is cleaved through a ring-closing mechanism to decompose into a lactone compound and a fragrance compound, thereby expressing the flavor, and carbon dioxide that is harmless to the human body can be generated during the decomposition process. That is, the carbonate linking group is cleaved by heat to decompose into a fragrance compound, thereby generating carbon dioxide. Then, the compound is decomposed into a lactone compound through ring closure, thereby expressing the flavor.
[0033] According to one embodiment of the present invention, in the above formula 1, n may be an integer of 1 or 2. R may be a linear or branched alkyl group having 1 to 30 carbon atoms; preferably, a linear or branched alkyl group having 2 to 10 carbon atoms.
[0034] According to one embodiment of the present invention, the moiety A in Formula 1 may be a moiety derived from a fragrance compound having at least one of an aromatic ring having a hydroxyl group, an aliphatic ring having a hydroxyl group, and an aliphatic chain having a hydroxyl group. The hydroxyl group may include a ring, a chain, or one or more of these (e.g., one or two). This may correspond to a substituent, a basic skeleton, and / or a moiety that includes a hydroxyl group. The hydroxyl group may participate in a carbonate linking group in Formula 1, and A' may correspond to a fragrance compound excluding the hydroxyl group. That is, since the hydroxyl group of the fragrance compound in moiety A is protected by the carbonate linking group, decomposition reaction due to ring closure at room temperature may be prevented.
[0035] According to one embodiment of the present invention, the fragrance compound may be selected from cyclic monoterpene compounds having a hydroxyl group, acyclic monoterpene compounds having a hydroxyl group, aromatic compounds having 6 to 10 carbon atoms having a hydroxyl group, and non-aromatic rings having 5 to 10 carbon atoms having a hydroxyl group, and isomers thereof. For example, the fragrance compound may be a compound selected from the following chemical formulas and generated when the carbonate linking group of the above chemical formula 1 is cleaved during pyrolysis. [ka] [ka]
[0036] According to one embodiment of the present invention, A' in the moiety A may be selected from the following formulas: where * corresponds to an oxygen position in the carbonate linking group. [ka] [ka]
[0037] According to one embodiment of the present invention, M is selected from alkali metals and transition metals, and M can form a salt with oxygen of the ester group to increase solubility in a water-soluble solvent and facilitate application of food and smoking articles. For example, the transition metal can be selected from Zr, Mg, Ca, Co, Rh, Ir, Nb, Pd, Pt, Fe, Ru, Os, Cr, Mo, W, Mn, Tc, Re, Cu, Ag, and Au, and the alkali metal can be selected from Li, Na, K, Rb, and Cs. For example, M can be a metal that forms a monovalent cation and can be selected from Li, Na, and K.
[0038] According to an embodiment of the present invention, the lactone compound may be a gamma lactone of Formula 2 or a delta lactone of Formula 3 below. [Chemical formula 2] [ka] [Chemical formula 3] [ka]
[0039] As an example of the present invention, in the above Chemical Formula 1 and Chemical Formula 2, R may be a linear or branched alkyl group having 1 to 30 carbon atoms, and preferably a linear or branched alkyl group having 2 to 10 carbon atoms.
[0040] According to an embodiment of the present invention, the lactone may be selected from the following chemical formulas: [ka]
[0041] According to an embodiment of the present invention, the compound may be selected from the following formulas 1-1 to 1-26. [Chemical formula 1-1] [ka] [Chemical formula 1-2]

[0085] Experimental Example A pyrolysis experiment was carried out to confirm the pyrolytic behavior of compound 5d (2B) when exposed to heat, and this was observed by the commonly known pyrolysis-gas chromatography / mass spectrometry (Py-GC / MS) method. The pyrolysis equipment (pyrolyzer) was a Double-Shot Pyrolyzer 2020iD (Frontier Lab, Japan) connected to a GC / MS (Agilent 6890 GC, USA / Agilent 7890 MSD, USA) system. 2B was diluted to a concentration of 2.5% in ethyl alcohol solution, and 10 ul was loaded into a pyrolyzer sample cup and pyrolyzed. The pyrolysis temperature was adjusted by specifying the temperature of the Double-Shot Pyrolyzer furnace, and the initial pyrolysis temperature was 80℃, and the sample cup with the sample placed in it was exposed to the furnace for 30 seconds to pyrolyze the target compound (2B) in the sample cup. The components generated or volatilized by heat were immediately injected into the GC / MS injector and separated. After pyrolysis, the sample cup was removed from the furnace during GC / MS analysis to avoid being affected by the pyrolysis temperature. After the GC / MS analysis by the initial pyrolysis was completed, the sample cup used initially was subjected to pyrolysis again without injecting new compounds, and this time the pyrolysis temperature was 10℃ higher at 90℃ for 30 seconds. After pyrolysis was completed, the sample cup was removed from the furnace to avoid being affected by the pyrolysis temperature. In this way, the first sample was loaded into the sample cup, and the pyrolysis experiment was carried out while increasing the temperature from 80℃, 90℃, 100℃ to 320℃. As a result, the pyrolysis characteristics of the compounds that are subjected to high pyrolysis temperatures were divided into temperature ranges and examined. The results are shown in Figures 15 and 16. [Disassembly mechanism] [ka]
[0086] 15 and 16, as a result of the thermal decomposition experiment of the compound [2B], it was confirmed that menthol and gamma-undecalactone were decomposed at a temperature of about 120°C.
[0087] That is, the lactone [1B, gamma-undecalactone] was ring-opened through the decomposition mechanism, and the hydroxyl group was covalently bonded to L-menthol via a carbonate linkage to produce compound [2B]. After compound [2B] is applied to the product matrix, L-menthol ([3B]) and CO2 are generated by heat, and compound [4B] with an exposed hydroxyl group is produced. Compound [4B] is also ring-closing (intramolecular esterification) by heat to produce gamma-undecalactone [5B]. In the state of [2B], the hydroxyl group is protected by a menthyl carbonate group, which can suppress ring-closing (intramolecular esterification) at room temperature. Looking at the thermal decomposition pattern of the [2B] compound, menthol is thermally decomposed and expressed between 120℃ and 260℃, gamma-lactone is primarily expressed between 120℃ and 200℃, and then secondary expression becomes abundant between 200℃ and 300℃. It seems that even if menthol, which is probably used as a protecting group, is deprotected by heat and expressed, it exists for a while in the form of [4B] compound, that is, in an intermediate state. Eventually, lactone is produced by intramolecular esterification, but in the salt form, this ring-closing may be delayed. In addition, the thermal decomposition experiment showed that as the temperature increases, menthol is thermally decomposed and expressed, and in the salt form [4B] state, intramolecular esterification occurs at higher temperatures to produce lactone [5B]. In other words, it was found that the remaining thermal decomposition (ring-closing) occurs at a higher temperature zone with a time lag from the temperature zone where menthol is thermally decomposed.
[0088] Example 2 The target product of the Production Example (synthesized sodium (4-menthylcarbonyloxy)heptanoate, 5a, 1% by weight), water (40% by weight), milk (10% by weight), and wheat flour (49% by weight) were mixed and kneaded to produce dough, which was then baked at 200°C for 1 hour in an electric oven. After removing from the oven, the product was smelled to confirm that a flavor (e.g., the lactone odor and menthol odor used in the synthesis of the target product) was expressed.
[0089] Example 3 The target product of the Preparation Example (synthesized sodium 5-(methylcarbonyloxy)decanoate, 5c, 0.01-5 wt%), base substrate (pulp, 95-99 wt%) and other additives (balance) were mixed and then produced into a sheet (2 mm thick) using a roll-to-roll machine and dried at room temperature. The sheet was smelled at room temperature, but did not smell of the flavor compounds used in the synthesis of the target product. Next, the sheet was applied to cigarette paper of a cigarette made from a normal cigarette, and the cigarette was smoked to confirm that the flavor (e.g., lactone flavor and menthol flavor used in the synthesis of the target product) was expressed during smoking.
[0090] Example 4 The target substance of the Preparation Example (synthesized sodium (4-menthylcarbonyloxy) undecanoate, 5d, 0.003-0.02% by weight), tobacco powder (tobacco powder, 90-99% by weight, average particle size of 0.03 mm to about 0.12 mm) and other additives (balance) were mixed and a tobacco composition was prepared in a conventional manner. The tobacco composition was applied to a smoking medium and wrapped in cigarette paper, and then a filter and a cigarette paper were constructed to prepare a conventional cigarette. The cigarette was smoked, and it was confirmed that the flavor of smoking was expressed in the mainstream smoke and sidestream smoke.
