AI Technical Summary

Technical Problem

Conventional methods for decorating bread, such as castella, with design images using icing treatments or syrups fail to integrate the design with the cake body and are limited to cakes with icing surfaces, preventing application on bread products without such surfaces.

Method used

A method involving the sequential sprinkling of edible powders through mask panels with coloring holes to create a design image on the bread surface, using multiple panels for each design area, and incorporating a wood rack aging process to prevent moisture evaporation and enhance adhesion.

Benefits of technology

The method allows for a precise and integral design image on bread, maintaining texture and shape integrity by using natural edible powders, and enhancing adhesion and durability through moisture control and heat treatment.

Abstract

A method for manufacturing bread embodying a design image, which is realized through a process of manufacturing at least one edible powder corresponding to at least one color constituting the design image to be embodied on the surface of the bread, and sequentially sprinkling the at least one edible powder into the coloring holes while sequentially arranging at least one panel having coloring holes formed corresponding to the color-by-color images constituting the design image on the surface of the bread. According to the present invention, by embodying the design image in such a way that edible powders having various colors are sequentially sprinkled onto the upper surface of the bread through the coloring holes of the mask panel, it is possible to successfully embody a design image that forms an integral part with bread such as castella. Also, according to the present invention, by embodying the design image using a plurality of mask panels each having coloring holes formed corresponding to each design area in sequence, it is possible to delicately embody a very delicate design image on the surface of the bread.
