Abstract

The invention relates to a tuber fiber powder comprising a tuber dietary fiber content, determined according to AOAC method 985.29, of at least 30%, and characterized in that it exhibits: - an oil absorption capacity, determined according to TEST A, ranging from 4.0 to 7.5 g of oil / g of powder; - a hydration capacity, determined according to TEST B, ranging from 10.0 to 20.0 g of water / g of powder. The invention also relates to a method for manufacturing said fiber.
