Abstract

This invention provides a method for promoting deamidation reactions by protein deamidation enzymes. According to the present invention, an improvement in reaction efficiency can be expected. The present invention is particularly useful for the deamidation of plant proteins such as pea protein. Claims

1. A method for deamidating proteins, in which protein glutaminase acts on a protein in the presence of polysaccharides.
