Claims

1. A method for producing a composition for inhibiting MMP-9 production, comprising β-1,3-1,6-glucan, A method characterized by comprising the step of culturing Oureobasidium pullulans strain APNN-M163 (accession number: NITE P-03377) in a glucose-containing medium to obtain β-1,3-1,6-glucan.

2. The method according to claim 1, wherein the culture medium contains a nitrate ion salt as a nitrogen source.

3. A composition for inhibiting MMP-9 production, manufactured by the method described in claim 1 or 2.

4. The MMP-9 production inhibitory composition according to claim 3, wherein the β-1,3-1,6-glucan comprises β-1,4 and β-1,2 links in addition to β-1,3 and β-1,6 links.

5. The MMP-9 production inhibitory composition according to claim 4, wherein the ratio of glucose units bound to adjacent glucose units only at the 1st and 4th positions of β-1,3-1,6-glucan to the total glucose units constituting the β-1,3-1,6-glucan is 0.04 or more and 0.08 or less.

6. The MMP-9 production inhibitory composition according to claim 4 or 5, wherein the ratio of glucose units bound to adjacent glucose units at the 1st, 2nd, 4th, and 6th positions of β-1,3-1,6-glucan to the total glucose units constituting the β-1,3-1,6-glucan is 0.04 or more and 0.08 or less.
